Ingredients

  • 250g pack unsalted butter
  • 300g light muscovado sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 200g self-raising flour
  • 50g desiccated coconut
  • 200g grated carrot
  • 2 tsp mixed spice

For the topping

  • 85g desiccated coconut
  • 25g light muscovado sugar
  • 25g butter, melted

Instructions

  • Step 1: Prepare a 20 x 30 cm traybake or small roasting tin by greasing and lining it. Preheat oven to 180C/160C fan/gas 4. Place the butter in a large saucepan over low heat and let it melt. Allow to cool for 5 minutes, then add the sugar, vanilla and eggs and stir until all 'ingredients' are combined evenly using a wooden spoon. Gradually stir in the flour, coconut and ¼ tsp of salt. Add the carrot and mixed spice to the mixture and combine. Place inside the oven and bake for 30 minutes.
  • Step 2: Meanwhile, blend 85g coconut together with 25g light muscovado sugar and 25g melted butter until even. Spread the mixture onto the cake and bake for additional 10 minutes until golden and a toothpick comes out clean. Allow the cake to cool, then cut it into squares.
