Ingredients
- 200g porridge or jumbo oats
- 120g unsalted butter, melted and cooled
- 1 orange, zested and juiced
- 100g dark chocolate, roughly chopped
- 80g brown sugar
- 100ml golden syrup
Instructions
- Step 1: Preheat oven to 200C/180C fan/gas 6 and cover a 25 x 18cm baking tin with parchment paper. Combine the oats and a pinch of salt in a bowl.
- Step 2: Heat the butter, sugar, and syrup in a small pan. After the butter is melted, take it off the heat and let it cool down for a couple of minutes. Grate the orange zest into the mixture, then squeeze in the orange juice. Pour the combination into the oats and thoroughly stir until everything has been mixed together. Add three quarters of the chopped chocolate.
- Step 3: Transfer the prepared mixture to the baking tin and press firmly with the base of a spoon. Scatter the remaining chocolate chunks on top and bake for 15-20 minutes until golden brown. Cut the cooled brownies into squares and carefully remove them from the tin. Cool them completely on a wire rack before serving.
