White Chocolate Cheesecake

Ingredients
- 300g digestive biscuits
- 150g unsalted butter, melted, plus extra to grease
- 400g white chocolate, broken into pieces
- 300g full-'fat' cream cheese (we used Philadelphia)
- 250g mascarpone
- 300ml double cream
- 200g strawberries or raspberries, to serve
Instructions
- Step 1: Grind the biscuits in a food processor until they are in a fine powder. Then, add the butter and mix until the texture is crumbly.
- Step 2: Prepare a 23cm deep, loose-bottomed cake tin by greasing and lining its base. Spread the biscuit mixture onto the cake tin and flatten it. Let the mixture chill in the refrigerator for about 30 minutes.
- Step 3: In a heatproof bowl, start melting the chocolate over a pan of hot water on low heat. Stir it every now and then to avoid sticking. Once it's melted, take it off the heat and allow it to cool off for 10 minutes until it's still liquid, but barely warm.
- Step 4: In the meantime, combining the cream cheese and mascarpone with a whisk. Pour in the double cream and continue stirring until the contents can retain their shape. Lastly, add the melted chocolate and mix until everything is fully incorporated.
- Step 5: Take the mixture and spread it over the biscuit base that has cooled and set. Even out the top of it. Place the dessert in the fridge to chill for at least 6 hours until the topping is hardened. Finish up by adding some fruit as a decoration.
