Ingredients
- 250g pack softened butter, plus extra for the tins
- 100ml strong black coffee (made with 2 tbsp coffee granules), cooled
- 280g self-raising flour
- 250g golden caster sugar
- ½ tsp baking powder
- 4 eggs
- 1 tsp vanilla extract
- 85g walnut, 2 tbsp roughly chopped, the rest finely chopped
For the filling
- 100g icing sugar, sifted, plus a little extra for dusting
- 150ml double cream
- 100g mascarpone, at room temperature
Instructions
- Step 1: Preheat the oven to 180C/160C fan/gas 4. Grease two 20cm springform cake tins with butter and line with baking parchment. Reserve 2 tablespoons of the coffee for the filling.
- Step 2: Cream together the butter, flour, sugar, baking powder, eggs, vanilla, and half of the coffee in a big bowl with an electric mixer until smooth. Mix in the chopped walnuts, then divide the batter between the pans and spread it out. Sprinkle the roughly chopped walnuts on top of one of the cakes. Bake the cakes for 25-30 minutes until golden, fluffy, and a wooden skewer inserted into the center comes out clean. Decorate the plain cake with the remaining coffee. Allow the cakes to cool in the pans.
- Step 3: While waiting, prepare the filling: whisk together the icing sugar, cream and mascarpone, then incorporate the 2 tbsp of coffee that were set aside. Spread onto the plain cake, then place the cake with walnuts on top and finish by sprinkling with a pinch of icing sugar.
