Ingredients

  • 350g self-raising flour, extra for dusting
  • ¼ tsp salt
  • 1 tsp baking powder
  • 3 tbsp caster sugar
  • 95g vegan vegetable spread
  • 150ml soy milk, plus extra to glaze
  • jam, to serve
  • vegan cream alternative, e.g. oat-based crème fraîche, to serve

Instructions

  • Step 1: Combine the flour, salt, baking powder and sugar in a bowl. Incorporate the vegetable spread until it resembles small crumbs. You can also blend it in a food processor until it looks like breadcrumbs.
  • Step 2: Add the milk to the flour blend slowly while continually stirring it until a unified texture is achieved.
  • Step 3: Sprinkle a thin layer of flour over a flat surface and roll out the scone dough until it's about 2cm thick. Place the dough onto a parchment lined baking tray and put it in the fridge to chill for a half hour.
  • Step 4: Take the dough out of the fridge and use a 7cm round cookie cutter to cut out individual scones. Place them on a baking sheet lined with parchment paper in an even pattern so that there is a 2cm gap between each one. Brush with the extra milk, avoiding the sides, to ensure an even rise. Place the sheet in the freezer for 15 minutes. Preheat the oven to 220C/200C fan/ gas 7. Take the scones out of the freezer and bake for 15-20 minutes until golden brown. Enjoy with jam and vegan cream, if desired.
