Ingredients

  • 100ml vegetable oil, plus extra for the tin
  • 275g self-raising flour
  • 200g golden caster sugar
  • 1 tsp baking powder
  • 1 lemon, zested, 1/2 juiced

For the icing

  • 150g icing sugar
  • ½ lemon, juiced

Instructions

  • Step 1: Preheat oven to 200C/180C fan/gas 6 and lightly grease a 1lb loaf tin. Line with baking parchment. In a bowl, combine the flour, sugar, baking powder and lemon zest. Add the oil, lemon juice and 170ml of cold water and whisk until the mixture is well blended.
  • Step 2: Pour the contents of the bowl into the tin. Bake the cake for 30 minutes or until a skewer inserted into the center comes out clean. Leave to cool in the tin for 10 minutes, then carefully transfer it to a wire rack to cool completely.
  • Step 3: In a bowl, sift the icing sugar. Add only enough lemon juice to achieve a consistency thick enough to coat the loaf; should the icing be too thin, it will slip off the cake.
