Ingredients
- 2 tbsp ground flaxseed
- 200g dark chocolate, roughly chopped
- ½ tsp coffee granules
- 80g vegan margarine, plus extra for greasing
- 125g self-raising flour
- 70g ground almonds
- 50g cocoa powder
- ¼ tsp baking powder
- 250g golden caster sugar
- 1½ tsp vanilla extract
Instructions
- Step 1: Preheat the oven to 170C/150C fan/gas 3½. Grease and line a 20cm square pan with parchment paper. Mix the flaxseed with 6 tbsp of water and let sit for a minimum of 5 minutes.
- Step 2: In a saucepan, add 120g chocolate, the coffee and margarine together with 60ml of water. Melt them over a low heat, and let the mixture cool off slightly.
- Step 3: Take a bowl and combine the flour, almonds, cocoa, baking powder, and a pinch of salt. Get rid of any lumps by stirring the 'ingredients'. Utilizing a hand whisk, add the sugar to the melted chocolate mixture and mix until you reach a polished and glossy consistency, making sure all the sugar is fully dissolved. Add the flaxseed mixture, vanilla extract, and left over chocolate, then the flour. Carefully spoon the mixture into the prepped tin.
- Step 4: Bake for 35-45 minutes, or until a skewer inserted in the center is removed with moist crumbs. Allow the cake to cool in the pan until completely cooled, then cut into squares. Place in an airtight container and consume within three days.
