Makes 10 bagels

Ingredients

  • 7g sachet dried yeast
  • 4 tbsp sugar
  • 2 tsp salt
  • 450g bread flour
  • poppy, fennel and/or sesame seeds to sprinkle on top (optional)

Instructions

  • Step 1: Combine the yeast, 1 tablespoon of sugar, and 100 milliliters of warm water in a large bowl. Let it sit for 10 minutes until the solution has a foamy consistency.
  • Step 2: Add 200ml of warm water into the bowl, and mix in the salt and half of the flour. Gradually incorporate the rest of the flour (you may not need it all) while kneading with your hands until you have a dough that is soft, but not sticky. Knead for 10 minutes until the dough is silky and springy. Form the dough into a ball and place it in a lightly oiled, clean bowl. Leave the dough in a warm area until it has doubled in size, which should take about an hour.
  • Step 3: Preheat the oven to 220C/200C fan/gas 7. Divide the dough on a lightly floured surface into 10 pieces, each weighing around 85g. Form each piece into a flat ball shape, then use the handle of a wooden spoon to form a hole in the center of the ball. Place the spoon into the opening and twirl it to make a hole that is approximately 3cm wide. Cover the bagels as you shape the remaining dough.
  • Step 4: Boil a large pot of water and add the leftover sugar. Put up to four bagels in the boiling water - keep them in the boiling water for 1-2 minutes, rotating them until they have expanded slightly and have formed a surface. Remove them with a strainer and get rid of the extra water. Sprinkle your selected topping onto the bagels and put them on a tray covered with parchment paper. Bake them in the oven for 25 minutes until they are golden and have a hollow sound when tapped. Let them cool off on a cooling rack and serve with your desired filling.
