Tiramisu Cheesecake

Ingredients
For the base
- 300g pack dark chocolate digestives
- 80g butter, melted
For the chocolate layer
- 500g milk chocolate, the best quality you can find, finely chopped
- 300ml double cream
- 100ml Tia Maria
For the cheesecake layer
- 300g cream cheese
- 200ml double cream
- 1 tsp vanilla extract
- 1 orange, zested
- 50g icing sugar
- cocoa powder and crushed coffee beans, to serve
Instructions
- Step 1: Cover the bottom of a 23cm springform cake tin with baking parchment. Crush the biscuits into crumbs as finely as possible, either by using a rolling pin inside a food bag, or through a food processor. Combine the crumbs with the melted butter and transfer to the tin, pressing down to form a single layer. Place the tin in the fridge.
- Step 2: Place the chocolate, cream and Tia Maria into a bowl and place over a pan filled with hot water. Stir until all the 'ingredients' have combined and have been melted, then pour over the biscuit base. Refrigerate for a minimum of 3 hours, or until solidified.
- Step 3: Combine the cream cheese, double cream, vanilla, orange, and sugar. Spread this mixture over the hardened chocolate layer, creating an even swirl pattern. Place the cake in the fridge for several hours or overnight. The cake can be made up to two days ahead and kept covered in the refrigerator.
- Step 4: To present, take it out of the refrigerator, sieve the cocoa powder over it and scatter the crushed coffee beans on top. Cut along the edge of the cheesecake and remove it from the tin, then offer it. If you'd like a clean look, use a blowtorch to bleach the exterior of the tin.
