Ingredients
- 400ml double cream
- 250g mascarpone
- 75ml marsala
- 5 tbsp golden caster sugar
- 300ml coffee, made with 2 tbsp coffee granules and 300ml boiling water
- 175g sponge fingers
- 25g dark chocolate
- 2tsp cocoa powder
Instructions
- Step 1: Gather the double cream, mascarpone, marsala and golden caster sugar in a large bowl.
- Step 2: Stir the cream and mascarpone until they are mixed together to form a texture similar to that of whipped cream.
- Step 3: Take a shallow dish and fill it with coffee. Soak a few sponge fingers in the coffee for a few seconds, turning them until they are saturated but not mushy. Place a layer in the dish until you have used half of the sponge fingers, then spread half of the creamy mixture upon them.
- Step 4: Start with the course side of the grater and grate most of the dark chocolate. Then layer the grated chocolate and coffee (you should use all the coffee), ending with the creamy layer.
- Step 5: Place in refrigerator and allow to cool for several hours or up to two days.
- Step 6: Sprinkle the cocoa powder on top and shave the rest of the chocolate onto the dish.
