Ingredients

For the biscuit crust

  • 85g hot melted butter, plus extra butter for greasing
  • 14 plain chocolate digestive biscuits, finely crushed

For the cheesecake

  • 3 x 300g packs full-'fat' cream cheese
  • 200g golden caster sugar
  • 4 tbsp plain flour
  • 2 tsp vanilla extract
  • 2 tbsp coffee liqueur
  • 3 large eggs
  • 285ml carton soured cream

For the topping

  • 142ml carton soured cream
  • 2 tbsp coffee liqueur
  • cocoa, for dusting
  • 8 hazelnut chocolates,unwrapped

Instructions

  • Step 1: Preheat the oven to 180C/fan 160C/gas 4. Line the bottom of a 25cm springform pan with parchment paper. Pulse the butter and biscuits crumbs together. Press the mixture into the bottom of the pan and bake for 10 minutes. Let it cool down afterwards.
  • Step 2: Preheat the oven to 240C/fan 200C/gas 9. Using an electric whisk, mix together the cheese and sugar until creamy, before gradually incorporating the flour, vanilla, 2 tablespoons of coffee liqueur, eggs and 285ml of soured cream.
  • Step 3: Generously spread butter on the inside of the cake tin. Pour the mixture into the tin and even out the top. Bake for 10 minutes at the specified temperature, then reduce the heat to 110C/fan 90C/ gas ¼ for 25 minutes. When time is up, turn the oven off and wait for two hours before opening the door and allowing the cake to cool down inside the oven. Small cracks in the surface of the cake are normal.
  • Step 4: Combine 142ml of sour cream and coffee liqueur, then spread evenly over the cheesecake. Refrigerate.
