Ingredients
- 225g self-raising flour, preferably organic
- ¼ tsp salt
- 50g slightly salted butter, chilled, cut in small pieces
- 25g golden caster sugar
- 125ml buttermilk
- 4 tbsp full-'fat' milk
- a little extra flour for dusting
- strawberry jam and clotted cream, to serve
Instructions
- Step 1: Heat up the oven to 220C/gas 7/fan 200C. Grease a baking sheet (only if the sheet isn't non-stick). Put the flour and salt in a bowl and add the butter. Using your hands, work the 'ingredients' together until you have small, crumbly pieces, making sure to raise your hands up and down to mix air in. Don't overwork the mixture too much as you want it to be a bit flaky. Now add the sugar and stir it in.
- Step 2: Measure out the buttermilk, then add the milk to dilute it. Create a slight indentation in the middle of the flour mixture with a round-bladed knife, then pour most of the mixture into the indentation, reserving a bit in case it is not necessary. Utilize the knife to blend the 'ingredients' together until a soft and somewhat sticky dough is formed. Incorporate any dry pieces of flour remaining in the dough with the rest of the buttermilk. Avoid overmixing or the dough will become hard.
- Step 4: Using your hands, softly press the dough down to a thickness of between 2cm-2.5cm. Dip a 5.5cm round fluted cutter into a bowl of flour to ensure the dough does not adhere to it. Then firmly push down the cutter with your palm - do not twist it. The dough will make a big sigh-like sound as the cutter presses in. Lightly gather any excess scraps and continue to press and cut out a few more scones.
- Step 5: Put the baking sheet in the oven and coat the top of the recipe with a thin layer of flour or glaze if you desire. Bake for a period of 10-12 minutes in order to make the recipe rise and get a golden color. Leave to cool on a wire rack, without covering it if a crispy top is desired, or with a cloth laid out loosely over it to achieve a soft top.
- Step 6: For a Cornish twist, top your scones with strawberry jam and a luscious layer of clotted cream. For a true Devonian experience, switch it up and go cream before jam. Savour your scones while they are still warm.
