Ingredients
- 175g self-raising flour
- 115g caster sugar
- 2 eggs
- 100g Greek yogurt
- 115g butter, melted and cooled slightly
- 100g strawberries, hulled and finely chopped
For the icing
- 300g icing sugar, sifted
- 150g butter, softened
- 2tbsp milk
- 1tsp vanilla extract
- pink food colouring
- 6 strawberries, halved, or 12 small whole strawberries
Instructions
- Step 1: Preheat the oven to 180C/160C fan/gas 4 and line twelve holes of a muffin tin with cupcake cases. Combine the flour and sugar in a large bowl. In a different container, whisk together the eggs, yogurt, and melted butter. Gradually add the wet 'ingredients' to the dry mix until a creamy batter is formed, then gently fold in the strawberries.
- Step 2: Fill the molds or cases with the batter up to three-fourths of the way. Bake for a period of 25-30 minutes or until golden in color and a wooden skewer inserted in the center comes out clean. Allow the cakes to cool down.
- Step 3: Prepare the icing. In a bowl, cream the sugar and butter until creamy and light. Incorporate the milk, vanilla, and a bit of pink food coloring until the icing takes on an even, pastel pink hue. Fill a pastry bag with a star nozzle with the icing, then swirl it on the cooled cupcakes. Top each one with a half strawberry or a small strawberry, and serve.
