Makes 20 biscuits

Ingredients

  • 150g plain flour, plus extra for dusting
  • 100g butter, chilled and cubed
  • 50g caster sugar, plus 1 tbsp for sprinkling

Instructions

  • Step 1: Preheat your oven to 170C/150C fan/gas 3. Place the flour, butter and sugar in a bowl. Use your fingers to mix the 'ingredients' until it resembles breadcrumbs, then press it together until it forms a dough.
  • Step 2: Dust a work surface with flour, then roll out the dough to a thickness of half a centimeter. Cut the dough into finger shapes and lay them on a lined baking sheet. Use a fork to make indentations, then top with the remaining caster sugar.
  • Step 3: Place the dough in the refrigerator for a duration of 20 minutes and bake for no more than 20 minutes until it has a golden brown color. Take the shortbread fingers out of the oven and allow it to cool on the baking tray for 10 minutes.
