Rocky Road Recipe

Ingredients
- 200g digestive biscuits (Rich Tea can also be used)
- 135g butter or margarine
- 200g dark chocolate (70% cocoa works best)
- 2-3 tbsp golden syrup
- 100g mini marshmallows (chopped regular marshmallows work too)
- icing sugar, to dust
Optional (up to 100g)
- raisins, dried cranberries or any dried fruit
- nuts
- popcorn
- honeycomb, broken into pieces
Instructions
- Step 1: Apply grease to an 18cm square baking tin and then line it with parchment paper.
- Step 2: Place 200g of digestive biscuits inside a freezer bag and crunch them into a variety of pieces ranging from crumbs to chunks the size of a 50p coin. Set aside.
- Step 3: In a large saucepan, slowly heat up 135g of butter or margarine, 200g of cocoa solids and 2-3 tablespoons of golden syrup until the chocolate has melted and there are no more clumps. Take the pan off the heat and let it cool.
- Step 4: Combine the biscuits, mini marshmallows (100g) and any additional 'ingredients' (dried fruit, nuts, popcorn, honeycomb) up to 100g, if preferred, with the chocolate mixture and mix until completely blended.
- Step 5: Pour the mixture into the lined baking tin and spread evenly to every corner. Place in the refrigerator for a minimum of two hours and sprinkle with icing sugar before cutting into twelve slices.
