Ingredients
- 150g plain flour
- 1 tbsp cocoa powder
- 1 tsp bicarbonate of soda
- 50g butter, softened
- 150g caster sugar
- 1 large egg, beaten
- 1 tsp vanilla paste
- 100ml buttermilk or kefir
- 50ml vegetable oil
- 1 tsp white wine vinegar
- 1 tbsp red gel food colouring
For the cream cheese icing
- 100g slightly salted butter, softened
- 225g icing sugar
- 100g full 'fat' cream cheese, stirred to loosen
Instructions
- Step 1: Grease a 12-cup cupcake pan and set it aside. Preheat the oven to 180C/160C fan/gas 4. Sift the flour, cocoa, baking soda and a pinch of salt together into a medium-sized bowl and stir until blended.
- Step 2: Using either a mixer or a handheld electric mixer, cream together the butter and sugar until light and airy. Next, blend in the egg, vanilla extract, buttermilk, oil and vinegar until everything is blended. Slowly incorporate the wet 'ingredients' into the dry 'ingredients'. Once everything is mixed together, mix in a few drops of red food coloring until you get a vibrant red color - this may vary depending on the product brand.
- Step 3: Place the batter in the cupcake cases and cook for 15 minutes or until a skewer inserted into the center of a cake comes out without any residue.
- Step 4: Whip the butter and icing sugar together using either an electric mixer or by hand until light and airy, roughly 3 minutes. Then, add the cream cheese and mix until all 'ingredients' are fully incorporated, for an additional 1-2 minutes.
- Step 5: When the cakes have cooled, use a star-tipped pastry bag to decorate the cakes with the cream cheese icing, or spread it across the top with a spoon.
