Ingredients

  • 140g ground almond
  • 140g butter, softened
  • 140g golden caster sugar
  • 140g self-raising flour
  • 2 eggs
  • 1 tsp vanilla extract
  • 250g raspberry
  • 2 tbsp flaked almond
  • icing sugar, to serve

Instructions

  • Step 1: Preheat oven to 180C/160C fan/gas 4 and line the bottom of a 20cm loose-bottomed cake tin with grease. Blend the ground almonds, butter, sugar, flour, eggs and vanilla extract in a food processor until smooth.
  • Step 2: Evenly distribute half of the mixture onto the cake pan and gently press it down. Scatter the raspberries, then place spoonfuls of the rest of the batter over it and spread it with your fingers. Sprinkle the flaked almonds and bake for 50 minutes until it turns golden. Allow it to cool, remove from the tin and dust with icing sugar to serve.
