Ingredients

  • 100g honey
  • 30ml Japanese whisky (we used Suntory Toki)
  • 3 dashes of coffee bitters
  • ice
  • lemon peel twist, to garnish

Instructions

  • Step 1: Place a kettle on the stovetop and bring the water to a boil. Mix honey with 100ml of boiled water in a heat-resistant bowl. Stir until the honey is dissolved and then set it aside to cool completely overnight. Store the resulting syrup in a sealed container in the refrigerator for up to one week.
  • Step 2: Take a stirring glass, measuring jug, or pint glass, and add the whisky and 15ml of the honey syrup. Dash in the bitters and add ice up to the rim. Stir with a bar spoon or any long spoon for 10-20 seconds (more stirring equals less alcoholic taste; stir longer for greater dilution).
  • Step 3: Pour the mixture through a sieve into a martini or coupe glass and garnish with a lemon peel twist.
