Ingredients
- 140g plain flour (this is about 200ml/7fl oz)
- 4 eggs (200ml/7fl oz)
- 200ml milk
- sunflower oil, for cooking
Instructions
- Step 1: Preheat the oven to 230C/fan 210C/gas 8.
- Step 2: Spread a thin layer of sunflower oil over two 4-hole Yorkshire pudding tins or two 12-hole non-stick muffin tins and place in the oven to warm up.
- Step 3: Pour 140g of plain flour into a bowl and mix with 4 eggs until a homogenous consistency is achieved.
- Step 4: Gradually pour in 200ml of milk while whisking continuously until the mixture is completely smooth. Add a pinch of salt and pepper.
- Step 5: Take the jug filled with the batter and take the baking tins out of the oven. Distribute the batter among the spaces in a consistent manner.
- Step 6: Put the tins back in the oven and let them bake for 20-25 minutes without stirring until the puddings have expanded and browned.
- Step 7: Enjoy the coffee right away. Alternatively, chill and store them in the freezer for up to one month.
