Ingredients
- 50g butter, melted, plus extra for the tin
- 500g ripe buttery pears, peeled, cored and roughly chopped
- juice 1 lemon
- 1 tbsp poire William liqueur (optional)
- 75g plain flour
- 1 heaped tsp baking powder
- 75g caster sugar
- 2 eggs, beaten
- 2 tbsp apricot jam, for the glaze
- icing sugar, for dusting
- crème fraîche, to serve
Instructions
- Step 1: Preheat oven to 180C/160C fan/gas 4. Grease a 20cm loose-bottomed cake tin with butter and line it with baking parchment.
- Step 2: Place the diced pears in a bowl with the lemon juice and Poire William (if using), to stop them from changing colour. Sift the flour and baking powder into a bowl and add a pinch of salt and the caster sugar. Whisk together the eggs and melted butter. Afterwards, mix in the pears together with the liquid. Pour the cake mixture into the baking tin. Bake for around 50 mins or until a skewer comes out clean. Put the cake on a wire rack and let it cool slightly before taking it out of the tin, carefully peeling away the parchment.
- Step 3: In order to make the glaze, dissolve the apricot jam with 1 tablespoon of water and strain out any clumps. Spread the glaze over the cake, sprinkle with icing sugar and enjoy with a dollop of crème fraîche.
