Ingredients

  • 175g butter, plus extra for greasing
  • 250g demerara sugar
  • 100ml maple syrup
  • 3 large eggs
  • 250g self-raising flour
  • 2 tsp baking powder
  • 2 tsp mixed spice
  • 250g parsnips, peeled and grated
  • 1 medium eating apple, peeled, cored and grated
  • 50g pecans, roughly chopped
  • zest and juice 1 small orange
  • icing sugar, to serve

For the filling

  • 250g tub mascarpone
  • 3-4 tbsp maple syrup

Instructions

  • Step 1: Preheat oven to 180C/160C fan/gas 4. Grease two 20cm sandwich tins and line the bases with parchment paper. In a pot over low heat, melt the butter, sugar, and maple syrup, then allow it to cool slightly. Beat the eggs into the mixture, then add the flour, baking powder, mixed spice, grated parsnip, diced apple, chopped pecans, orange zest, and orange juice. Divide the batter evenly between the two tins, then bake for 25-30 minutes, until they are lightly springy when touched.
  • Step 2: Allow the cakes to cool slightly in their pans before transferring them to cooling racks. In the interim, blend the mascarpone and maple syrup together. Spread the mixture on top of one cake and form a sandwich with the second cake. Sprinkle icing sugar over the sandwich just before serving.
