Orange Chocolate Cake

Ingredients
- 1 Seville orange
- a little melted butter, for greasing
- 100g plain chocolate, broken into pieces
- 3 eggs
- 280g caster sugar
- 240ml sunflower oil
- 25g cocoa powder
- 250g plain flour
- 1½ tsp baking powder
- orange candied peel, to decorate
For the chocolate ganache
- 200g plain chocolate, broken into pieces
- 225ml double cream
Instructions
- Step 1: Use a skewer to puncture the orange (all the way through). Simmer in hot water for 30 minutes until tender. Place the entire orange in a blender and blend until smooth; set aside to cool.
- Step 2: Preheat the oven to 350°F/gas mark 4/convection 320°F. Grease and line the bottom of a 9-inch round cake pan. Melt the chocolate in a heat-safe bowl placed over a pot of lightly boiling water, or in the microwave for 1-minute intervals, stirring between each interval. Allow the chocolate to cool.
- Step 3: In a bowl, whisk the eggs, sugar and oil together. Stir in the puréed orange, making sure to discard all seeds, then incorporate the melted chocolate that was cooled previously. Sift in the cocoa, flour and baking powder and mix all the 'ingredients' together. Pour the mixture into a tin and bake in the center of the oven for 55 minutes or until the cake is lightly pressed in the center and springs back. (Verify after 45 minutes and cover with a sheet of foil if it is browning too quickly.) Let cool for 10 minutes in the tin then transfer to a wire rack to completely cool down.
- Step 4: Prepare the chocolate ganache: Place the chocolate in a bowl that can withstand heat. Boil the cream and pour it over the chocolate. Let it sit for 2 minutes before stirring until it is combined. Allow it to cool down and thicken until it can be used to top the cake – it usually takes 1½ hours.
- Step 5: Transfer the cake to a plate that is designated for serving. Use a palette knife to spread the ganache on top. Garnish with thin strips of candied orange zest.
