Ingredients
- 250g unsalted butter
- 250g golden caster sugar
- 4 large eggs
- 140g polenta
- 200g plain flour
- 2 tsp baking powder
- zest and juice 2 oranges (less 100ml juice for the glaze)
For the orange glaze
- 100ml orange juice
- 100g golden caster sugar
Instructions
- Step 1: Preheat oven to 160C/140C fan/gas 3. Line the bottom and sides of a 23cm round cake tin with parchment paper. Blend the butter and sugar together until creamy. Gradually add the eggs one by one and blend each time until completely mixed. Then, stir in the dry 'ingredients' before measuring off 100ml for the glaze and adding the zest and juice.
- Step 2: Place the mixture into the tin, making sure it is spread out evenly, and bake for approximately 45 minutes or until a stick inserted into the middle of the cake comes out clean. Take out from the oven and place onto a cooling rack.
- Step 3: In a medium saucepan, bring the sugar and juice to a boil. Allow it to simmer for 5 minutes, then take it off the heat and let it cool. Once cooled, pour the orange glaze on top of the cake. Serve with a side of Lemon ice cream.
