Ingredients

For the biscuit base

  • 125g softened butter
  • 50g caster sugar
  • 5 tbsp cocoa powder
  • 1 egg, beaten
  • 200g digestive biscuits, blitzed to crumbs
  • 100g desiccated coconut
  • 50g chopped almonds (optional)

For the custard icing

  • 100g butter, softened
  • 4 tbsp double cream
  • 3 tbsp custard powder
  • 250g icing sugar

For the chocolate topping

  • 150g dark chocolate
  • 50g butter

Instructions

  • Step 1: Begin by preparing the biscuit base. Place a bowl over a pot of gently steaming water and combine the butter, sugar, and cocoa powder, stirring occasionally until combined. Incorporate the egg and whisk for 2-3 minutes until the mixture has become thickened. Remove from the heat and fold in the biscuit crumbs, coconut and almonds (if desired), then firmly press the mixture into the base of an lined 20cm square baking tin. Place in the refrigerator for 10 minutes.
  • Step 2: To create the central layer, make a custard icing; mix the butter, cream, and custard powder together until blended and light, then slowly incorporate the icing sugar until completely blended. Spread the custard over the lower layer and chill in the refrigerator for at least 10 minutes until the custard is firm.
  • Step 3: In the microwave, combine and melt together chocolate and butter, then cover the chilled bars with the melted mixture and put back in the refrigerator. Allow the chocolate to fully set (approximately 2 hours). Take the mixture out of the pan and divide into squares to serve.
