Ingredients
- 85g very soft butter
- 85g golden caster sugar
- 2 eggs, beaten
- 85g self-raising flour
- 2 tsp instant coffee powder
- small handful of walnut pieces (optional)
For the buttercream
- 1 tsp instant coffee powder
- 1 tsp milk
- 25g very soft butter
- 100g icing sugar
Instructions
- Step 1: In a medium-sized bowl, combine the butter and sugar until well-blended and light in texture. Then, mix in the eggs, followed by the flour and instant coffee. Incorporate the majority of the walnuts, if desired, keeping a few aside for decoration. Place the mixture in a microwave-safe dish and microwave on full power for two minutes. Lower the heat to medium and cook for additional two minutes.
- Step 2: After 4 minutes, poke the cake to check if it is done. It should appear puffed up and its surface should bounce back when touched. If the cake needs further baking, cook it on medium heat for another minute at a time, checking each minute until the cake is cooked. Then, take it out of the oven and let it cool down.
- Step 3: Create the coffee butter cream. In a separate bowl, mix together the milk and coffee until dissolved. Incorporate the butter and icing sugar, and beat until light and fluffy. Spread the mixture over the cake, and top with the remaining walnuts.
