Ingredients
- 225g unsalted butter, softened
- 225g caster sugar
- 4 eggs
- 225g self-raising flour
- 1 lemon, zested
For the drizzle topping
- 1½ lemons, juiced
- 85g caster sugar
Instructions
- Step 1: Preheat oven to 180C/160C fan/gas 4.
- Step 2: Cream the butter and caster sugar together until light and fluffy, then gradually incorporate the eggs, one at a time.
- Step 3: Incorporate the self-raising flour into the mixture, then insert the lemon zest and blend until everything is thoroughly mixed.
- Step 4: Place parchment paper in an 8x21 cm loaf pan and fill the pan with the mixture, evening out the top with a spoon.
- Step 5: Place the cake in the oven for 45-50 minutes, or until a thin skewer inserted into the middle of the cake comes out without any batter clinging to it.
- Step 6: Combine the lemon juice and caster sugar while the cake is cooling in its tin to create the drizzle.
- Step 7: Pierce the warm cake repeatedly with a fork or skewer, then pour the drizzle over it - the liquid will settle in and sugar will form an appetizing, crunchy topping.
- Step 8: Allow to cool completely in the can, afterwards remove and serve. Can be stored in an airtight container for 3-4 days, or frozen for up to one month.
