Ingredients

  • 170g soft salted butter
  • 150g golden caster sugar
  • 2 eggs
  • 70g natural yogurt
  • 150g self-raising flour
  • 50g ground almonds
  • orange, zested
  • 2-3 tbsp milk
  • 5 tbsp lemon curd
  • 20g flaked almonds
  • lemon zest, to decorate

Instructions

  • Step 1: Preheat your oven to 180C/160C fan/gas 4. Grease a 1-litre loaf tin and line the bottom and sides with baking parchment.
  • Step 2: Combine the butter, sugar, eggs, yogurt, self-raising flour, ground almonds, orange zest, milk and 2½ tablespoons of lemon curd in a large bowl and mix until blended. Whisk an extra 2½ tablespoons of lemon curd in a separate bowl until light and fluffy.
  • Step 3: Add half of the batter to the tin and spread the lemon curd evenly over the top. Pour the rest of the mixture over and sprinkle the almonds. Bake in the oven for 50 minutes or until the top is golden and fluffy. Place on a wire rack to cool, garnish with zest and cut into slices.
