Ingredients
- 200g self-raising flour
- 100g caster sugar
- 100g butter
- 1 egg, lightly beaten
- 4 tbsp strawberry jam
Instructions
- Step 1: Preheat the oven to 190C/fan 170C/gas 5. Combine the flour, sugar and butter together until it resembles the texture of breadcrumbs. Alternatively, pulse in a food processor. Mix in enough egg to create a firm dough.
- Step 2: Lightly dust your hands with flour and form the dough into a cylindrical shape, approximately 5cm in circumference. Cut each cylinder into discs 2cm thick, and arrange them on a large baking tray leaving enough gap between them as the dough will expand as it bakes.
- Step 3: Using the end of a wooden spoon, gently press into the center of each slice, forming a small indentation. Place a teaspoon of jam in the center of each and bake for 10-15 minutes, until slightly risen and lightly browned. Allow to cool completely on a wire cooling rack.
