Ingredients

For the cupcake mixture

  • 120g butter, softened
  • 120g caster sugar
  • 2 egg
  • 1 tsp vanilla extract
  • 120g self-raising flour

For the buttercream icing

  • 140g butter, softened
  • 275g icing sugar
  • 1-2 tbsp milk
  • A few drops of food colouring (optional)

Instructions

  • Step 1: Prepare the oven by preheating to 180C/160C fan/gas 4, and grease a 12-hole muffin tin with paper cases.
  • Step 2: Combine the butter and sugar in a bowl and whisk until light in color. Separately, beat the eggs together, then blend them into the butter blend with the vanilla extract.
  • Step 3: Gently incorporate the flour into the mixture, adding a little bit of milk until it reaches a semi-runny texture. Carefully scoop the mixture into the paper cases, filling them up to three-fourths of their capacity.
  • Step 4: Place in the oven and bake for 10-15 minutes until the cake is golden-brown and a skewer inserted into it comes out clean. Let it cool for 5-10 minutes before transferring to a wire rack.
  • Step 5: Cream the butter until light and fluffy. Gradually add in half of the icing sugar, blending until the texture is consistent.
  • Step 6: Mix gradually the remaining icing sugar with 1 tbsp of milk, adding additional milk if necessary, until the consistency is silky and smooth. Add food dye (optional) and mix it thoroughly.
  • Step 7: Fill a piping bag with the buttercream and attach a nozzle of your preference. Create a swirling pattern and savour!
