If you ever had the thought that plums can’t possibly turn into something heavenly and scrumptious, you're wrong. Our Heavenly Plum Cake will prove you boundless wrong.

We start by preheating the oven to 180C/160C fan/gas 4, generously buttering the bottom and sides of a 23cm cake tin and leaving a piece of baking parchment with demerara sugar sprinkled over it. We layer a big batch of halved plums, cut-side facing down, in the tin and, for the cake, we mix butter, muscovado sugar, syrup, eggs, milk, self-raising flour, bicarbonate of soda, ground ginger and mixed spices together, making sure it has an even texture. After placing the batter on top of the plums, we bake the cake for 45-55 minutes until it feels firm, cool it for 10 minutes and then move it to a wire rack.
