We layer a big batch of halved plums, cut-side facing down, in the tin and, for the cake, we mix butter, muscovado sugar, syrup, eggs, milk, self-raising flour, bicarbonate of soda, ground ginger and mixed spices together, making sure it has an even texture. After placing the batter on top of the plums, we bake the cake for 45-55 minutes until it feels firm, cool it for 10 minutes and then move it to a wire rack.

Ingredients

  • butter, for greasing
  • 2 tbsp demerara sugar
  • 500g plum

For the cake

  • 175g butter
  • 175g dark muscovado sugar
  • 140g golden syrup
  • 2 eggs, beaten
  • 200ml milk
  • 300g self-raising flour
  • ½ tsp bicarbonate of soda
  • 1 tbsp ground ginger
  • 1 tsp mixed spice

Instructions

  • Step 1: Preheat the oven to 180C/160C fan/gas 4. Generously butter the bottom and sides of a 23cm square cake tin and lay down a piece of baking parchment over it. Sprinkle the demerara sugar over the parchment. Cut the plums in half and layer them in the tin with the cut-side facing down.
  • Step 2: In a large pan, melt the butter, muscovado sugar and syrup over a low heat and stir until the mixture is even. Let cool for 10 minutes, then add the eggs and milk. Sift in the flour, bicarbonate of soda and spices and combine until the batter is consistent.
  • Step 3: Place the batter on top of the plums in the tin and bake for 45-55 minutes until it feels firm. Allow the cake to cool in the tin for 10 minutes and then move it to a wire rack to cool completely. The cake can be stored in the fridge in parchment paper and foil for up to 5 days.
