Ingredients

  • butter for the tin
  • 3 eggs
  • 100g golden caster sugar, plus extra for dusting
  • 80g plain flour
  • 2 tbsp cocoa powder
  • ½ tsp baking powder
  • ¼ tsp vanilla extract
  • 300g dark chocolate

For the filling

  • 125g butter, softened
  • 125g icing sugar
  • 1 tsp milk
  • few drops peppermint extract

Instructions

  • Step 1: Preheat the oven to 200C/180C fan/gas 6. Grease a 24 x 32cm Swiss roll tin and line it with baking parchment. Using an electric hand whisk, beat the eggs and sugar together for 2-3 minutes until it is pale and thick.
  • Step 2: Incorporate the flour, cocoa powder, baking powder and vanilla extracts into the egg mixture with a large metal spoon until the mixture is homogeneously blended.
  • Step 3: Use a spatula to scoop the mixture into your Swiss roll tin, and then use the back of the spatula to spread it out evenly. Place in the oven for 15 minutes until the sponge is light and bouncy.
  • Step 4: Take the sponge out of the oven before it cools for one to two minutes. Use a rolling pin to carefully press down on the sponge, flattening it slightly. While it’s still warm, start at the longest edge and roll it up, keeping the baking parchment attached. Roll it up until you reach the middle, then turn it around and roll away from the other side until the two rolls meet in the middle. Allow the sponge to cool completely before unrolling. Clean the electric beaters.
  • Step 5: While the sponge is cooling, prepare the buttercream. Place butter in a bowl with half the icing sugar, milk, and peppermint extract. By hand, mix everything together until completely combined, then fold in the remaining sugar, and switch to an electric mixer and beat until light and airy. Give it a taste and add more peppermint flavoring if desired. Refrigerate until ready to be used.
  • Step 6: Cut the cooled sponge in half along the spot where the two rolls come together and unfurl. Generously spread or pipe a layer of buttercream on the top of each of the two length of sponge. Use a pallet knife or the back of a spoon to even it out, and then roll up the sponge as tightly as possible. Cut off the ends, and cut each roll into 6 even parts. Place them on a tray and store them in the refrigerator while you prepare the topping.
  • Step 7: Heat the chocolate until it melts, either in a bowl placed over simmering water or in the microwave (checking and stirring every 30 seconds).
  • Step 8: Retrieve the mini rolls from the refrigerator and spread over them a layer of melted chocolate. Place them on a piece of parchment paper to harden the chocolate and then enjoy. Store the rolls in an airtight container at a cool temperature for up to 24 hours.
