Ingredients
- 100g salted butter, cubed
- 75g light brown soft sugar
- 1 tbsp grated fresh ginger
- 100g golden syrup
- 250g self-raising flour
- 1½ tbsp ground ginger
- 1 tsp bicarbonate of soda
- 1 small egg yolk, beaten
Instructions
- Step 1: Preheat the oven to 190C/170C fan/gas 5, and line two large baking trays with baking parchment. Heat a saucepan over low heat, then pour in the butter, sugar, fresh ginger, and golden syrup. Stir until the mixture is completely melted, then set aside to cool.
- Step 2: Combine the flour, ginger powder and baking soda in a bowl using a wooden spoon. Slowly add the cooled sugar combination and the egg yolk and knead until a dough forms.
- Step 3: Divide the dough into 20g portions and place onto the lined baking sheets, leaving 3cm of space in between for spreading. Cook for 8-10 minutes until golden brown. Allow the cookies to cool slightly on the trays prior to transferring to a cooling rack to cool completely.
