Ingredients
- 225g salted butter, cubed, plus more for the tin
- 300g dark chocolate, roughly chopped
- 1 tbsp coffee powder
- 6 large eggs, whites and yolks separated
- 100g soft light brown sugar
- 200g caster sugar
- 2 tsp vanilla paste
- 30g cocoa powder
- berries, to serve (optional)
Instructions
- Step 1: Preheat the oven to 160C/140C fan/gas 3. Grease a 23cm springform cake tin and cover the bottom with baking parchment.
- Step 2: In a medium heatproof bowl, melt the butter and chocolate with the help of a microwave, or by placing the bowl over a pot of softly boiling water. Blend the coffee powder with 2 tablespoons of hot water to dissolve. Mix in the coffee in the chocolate and set it aside to cool for a bit.
- Step 3: Using an electric whisk, whisk the egg whites in a large bowl for 2 minutes until light and airy peaks appear. Separately, whisk together the 'sugars', vanilla and egg yolks for 5-8 minutes, until the mixture is pale and fluffy. Sift the cocoa powder into the egg yolk mixture and fold in gently.
- Step 4: Incorporate the cooled chocolate into the egg yolk combination, carefully blending the egg whites until the mixture is even. Put the contents in the tin and bake for between 1 and 1.2 hours, or until a skewer inserted into the center of the cake returns clean. After baking, let cool, remove it from the tin and enjoy with fresh berries if desired.
