Ingredients

  • 250g plain flour, plus extra for rolling out
  • ¼ tsp fine sea salt
  • 2 tbsp icing sugar
  • 140g cold butter, cubed
  • 2 egg yolks, beaten
  • cream or custard, to serve (optional)

For the filling

  • 100g salted butter, softened
  • 100g caster sugar
  • 50g ground almonds
  • 1 tsp almond extract
  • 2 medium eggs, beaten
  • 3 tbsp raspberry jam
  • 50g flaked almonds
  • 80g icing sugar

Instructions

  • Step 1: Set your oven to 200C/180C fan/gas 6. To create the pastry, add the salt, icing sugar and flour to a food processor and blend together. Pulse the butter until the mixture has the consistency of breadcrumbs. Whisk together 4 tablespoons of cold water and the beaten eggs, then drizzle it into the processor and rapidly pulse to combine. Empty the crumbly mixture onto a clean work surface, shape into a disk, cover and refrigerate for thirty minutes.
  • Step 2: On a floured surface, roll the pastry out until it is about 25 cm (roughly the size of a one pound coin) thick. Place the pastry into the 20cm fluted tart tin, allowing the pastry to overhang. Cover the edges of the pastry with a large round of baking parchment and a layer of baking beans (or dried rice or lentils, if you do not have baking beans). Bake for 15 minutes, then take away the parchment and beans. Bake for another 7 - 10 minutes or until the bottom is cooked through. Finally, trim off any excess pastry with a serrated knife.
  • Step 3: In a separate bowl, cream together the butter and sugar. Add the ground almonds, almond extract, and eggs and beat for an additional minute. Spread the jam onto the pastry, followed by the almond mix. Cover with the flaked almonds and bake in the oven for 25-30 minutes, or until the surface is golden and firm. Allow the pastry to cool in the tin (or indulge and have a bite straight from the oven, and omit the last step).
  • Step 4: Combine the icing sugar and 1-2 tsp of water, and spread over the tart. Cut into slices and enjoy with cream or custard if you wish.
