Ingredients

  • 175g plain flour, plus extra for dusting
  • 100g cold salted butter, cut into cubes
  • 335g icing sugar
  • ½ tsp vanilla extract
  • 2 medium egg yolks
  • 100g raspberry jam
  • 50g glacé cherries, quartered

Instructions

  • Step 1: Place the flour, butter, icing sugar (85g), vanilla and egg yolks into a food processor and blend in short bursts until incorporated (or rub the butter and flour together in your fingers and mix in the sugar, vanilla and egg yolks). If the mixture appears a bit dry, add ½ tbsp of water. Spread the lumpy mixture onto a flat surface and lightly knead until the dough is shaped into one. Cover and chill in the fridge for 30 minutes.
  • Step 2: Preheat oven to 180C/160C fan/gas 4. Line two baking sheets with parchment. Sprinkle a work surface with a light layer of flour and roll the dough until it is 3mm thick. Cut circles from the dough with a 7cm cutter. Gather the remaining pieces of pastry and roll them out to make more biscuits. Place the discs of dough on the baking sheets and bake them for 10-12 minutes or until the edges are lightly golden brown. Transfer them to a wire cooling rack to cool completely.
  • Step 3: Create a thick icing by combining the leftover icing sugar and 2-3 tsp of water. Spread the icing onto the top of the remaining biscuits, making sure to leave a rim around each one. Place a small glacé cherry in the centre of each biscuit and let it sit for half an hour. Then, spread jam over the un-iced biscuits and join the iced biscuits together, forming sandwiches. The biscuits can last up to two days if kept in a sealed container.
