Ingredients

For the cake

  • 1 medium orange
  • 140g raisin
  • 125ml rapeseed oil
  • 115g plain wholemeal flour
  • 1 tsp baking powder, plus a pinch
  • 1 tsp bicarbonate of soda
  • 1 rounded tsp ground cinnamon
  • 140g dark muscovado sugar
  • 280g finely grated carrot (about 375-400g carrots before peeling)
  • 2 eggs
  • 115g self-raising flour

For the frosting

  • 100g light soft cheese, straight from the fridge
  • 100g quark
  • 3 tbsp sifted icing sugar
  • ½ tsp finely grated orange zest
  • 1½ tsp lemon juice

Instructions

  • Step 1: Preheat your oven to 160C/fan 140C/gas 3. Grate the zest from the orange and then squeeze 3 tablespoons of juice. Place the raisins in a bowl and pour the juice over them. Add the orange zest, then let the mixture stand while you prepare the cake. Grease and line the bottom of a 20cm square cake tin. Combine the flours with 1 teaspoon of baking powder, bicarbonate of soda, and cinnamon.
  • Step 2: Crack the egg and separate the yolk and white into two separate bowls. Crack the remaining egg and add it to the large bowl with the yolk and sugar. Whisk for 1-2 minutes until the sugar and egg are thick and fluffy. Gradually add the oil, whisking on a low speed until it's fully combined. Slowly incorporate the flour mix in batches, stirring with a rubber spatula or large spoon. The batter will be quite thick. Put a pinch of baking powder in with the egg white, whisking until stiff peaks form.
  • Step 3: Incorporate the carrot, raisins (and any liquid) into the flour combination. Gently blend in the beaten egg white, then pour into the pan. Shake the pan to even out the mixture. Bake for 1 hour until expanded and solid or until a skewer inserted into the center comes out spotless. Allow to cool in the tin for 5 minutes, invert onto a wire rack, remove the paper, then permit to cool completely.
  • Step 4: Blend together the soft cheese, Quark, icing sugar, and orange zest - be careful not to overmix. Then, incorporate the lemon juice. Spread the frosting over the cake and cut into 16 pieces. This dessert is even tastier when you leave it wrapped for a couple of days before decorating and consuming. It will stay fresh in an airtight container or in the fridge, if already iced, for up to 5 days.
