Ingredients

  • 375g good quality dark chocolate
  • 375g butter, cut into pieces
  • 500g caster sugar
  • 6 medium eggs
  • 225g plain flour

For the topping (optional)

  • 140g good quality dark chocolate
  • 50g butter, cut into pieces
  • icing sugar for dusting

Instructions

  • Step 1: Grease and line a 30cm x 21cm tin. Preheat the oven to 180C/160C fan/gas 4. Chop the chocolate into pieces and melt with the butter in the microwave on medium for around 5 minutes, stirring intermittently.
  • Step 2: Combine the sugar and eggs in a bowl. Incorporate the melted chocolate, then add the flour and mix until blended. Pour into the pan and bake for 40-45 minutes, or until the surface appears crinkly and feels tender. Allow to cool down in the pan.
  • Step 3: For the topping, mix together the chocolate and butter, then heat in the microwave on medium power for approximately 1 minute. Stir until you have a creamy consistency and spread over the cake. Finish by sprinkling icing sugar and slicing into squares.
