Ahhh fall baking… how I love thee. Let me count the ways! Particularly when it comes to apples. This time of year is prime apple picking season and I am absolutely obsessed with creating delicious treats with them. Let me introduce you to my Easy Apple Pie!

This is the pie that looks like it must have come straight from a bakery! But, don't be fooled, it's surprisingly easy to make. From start to finish, you'll be done in an hour or less. Plus, all you need are a few simple ingredients: apples, butter, sugar, eggs, flour, cinnamon, and caster sugar.

This is one of my favorite desserts because my entire house smells like a dream while it bakes. Every time the mind-blowing scent of fresh apples and buttery pastry wafts through our home, I feel like I've been transported to a beautiful orchard. Easy Apple Pie

Ingredients

For the filling

  • 1kg Bramley apples
  • 140g golden caster sugar
  • ½ tsp cinnamon
  • 3 tbsp flour

For the pastry

  • 225g butter, room temperature
  • 50g golden caster sugar, plus extra
  • 2 eggs
  • 350g plain flour, preferably organic
  • softly whipped cream, to serve

Instructions

  • Step 1: Place a single layer of paper towels onto a large baking tray. Slice the apples into quarters before coring and peeling them, then cut into 5mm thick slices and arrange uniformly on the baking tray. Cover the apples with a few paper towels and reserve while you prepare and chill the pastry.
  • Step 2: In a large bowl, cream together butter and sugar until partially combined. Add the entire egg and the yolk, beating for nearly one minute or until it resembles scrambled eggs. Begin incorporating the flour using a wooden spoon, adding 1/3 at a time until it starts to clump. Then, use your hands to form it into a ball. Wrap in plastic wrap and allow to chill for 45 minutes. Next, mix together sugar, cinnamon and flour in a bowl large enough to hold the apples for the filling.
  • Step 3: Preheat oven to 190C/fan 170C/gas 5. Take the pastry out of the refrigerator and whisk the egg white with a fork. Cut a third of the pastry and wrap it up. Roll out the remaining pastry and use it to line a 20-22cm round and 4 cm deep pie tin, leaving a slight overhang. Roll the remaining third into a 28cm circle. Pat the apples dry with a paper towel and add them to the bowl filled with the cinnamon-sugar mix. Give it a quick mix with your hands and then pile the apples into the pastry-lined tin.
  • Step 4: Take a wet pastry brush and lightly moisten the pastry rim. Place the pastry lid over the apples and press down firmly to seal the edges. Trim the excess with a sharp knife and make five small cuts on top of the lid to release the steam. (At this point, you can also freeze the dessert.) Brush the entire pastry with the egg white and coat with caster sugar. Bake for 40-45 minutes until golden-brown. Let it cool for 5-10 minutes. Sprinkle with a bit more caster sugar and serve warm with some softly whipped cream.
