Ingredients

  • 2 tbsp icing sugar
  • 4 tbsp coffee essence
  • ½ tsp vanilla extract
  • 80g walnut halves
  • 2 meringue nests, crushed
  • 120g coffee walnut cake, cut into cubes

Instructions

  • Step 1: In a bowl, mix the double cream and icing sugar with a whisk until soft peaks form. Incorporate the coffee essence and vanilla extract into the cream mixture. Toast the walnut halves on a skillet for two minutes until they turn golden. Set aside to chill. Chop the cooled walnuts into small pieces and add half into the coffee cream. Put alternating layers of coffee cream, chopped walnuts, crushed meringue nests and cubed coffee walnut cake into the dessert glasses and serve.
