Ingredients

  • butter, for the tin
  • 100g white chocolate
  • 200g digestive biscuits, crushed

For the cake

  • 500g mascarpone
  • 200g full-'fat' yogurt
  • 3 eggs
  • 100g caster sugar
  • 1 lemon, zested, 1/2 juiced
  • ½ tsp vanilla bean paste
  • 50g shelled pistachios, roughly chopped
  • 1 tbsp icing sugar (optional)
  • mixed berries, to serve (optional)

Instructions

  • Step 1: Grease the bottom and sides of a 20cm springform cake tin with butter and line it with baking parchment. Melt the white chocolate in a large bowl placed over a pot with simmering water (be sure that the wheel doesn't touch the water), or you can melt it in the microwave in short intervals. When the chocolate is all melted, mix in the biscuits and a light pinch of salt. Evenly press the mix into the lined cake tin, making sure it reaches the edges. Place in the refrigerator for at least 20 minutes.
  • Step 2: Preheat the oven to 140C/120C fan/gas 1. Thoroughly mix the mascarpone, yogurt, eggs, caster sugar, lemon zest and juice and vanilla bean paste with an electric whisk until all the 'ingredients' are nicely blended. Pour this mixture over the biscuit base that is in the tin and place the tin onto a baking tray. Bake for 45 mins until the cheesecake has a slight jiggle in the center. Turn off the oven and prop the door open, leaving the cheesecake in the oven until it has cooled completely.
  • Step 3: Release the sides and bottom of the baking tin with a knife, then very carefully lift the cheesecake onto a serving plate. Cover with the pistachios and sprinkle with the icing sugar, adding the berries to the plate as a garnish.
