Delightful Coffee Dream Cake
This Delightful Coffee Dream Cake is the perfect sweet treat for coffee-lovers. A moist, gooey chocolate cake, layered with a silky ganache and topped with grated chocolate or chocolate curls. A heavenly combination of coffee and chocolate that's sure to delight!
Ingredients
For the chocolate cake
- 200g dark chocolate (about 60% cocoa solids), chopped
- 200g butter, cubed
- 1 tbsp instant coffee granules
- 85g self-raising flour
- 85g plain flour
- ¼ tsp bicarbonate of soda
- 200g light muscovado sugar
- 200g golden caster sugar
- 25g cocoa powder
- 3 medium eggs
- 75ml buttermilk
- 50g grated chocolate or 100g curls, to decorate
For the ganache
- 200g dark chocolate (about 60% cocoa solids), chopped
- 300ml double cream
- 2 tbsp golden caster sugar
Instructions
- Step 1: Preheat the oven to 160C/fan 140C/gas 3. Grease and line a 20cm round cake tin (7.5cm deep).
- Step 2: Place 200 grams of chopped dark chocolate and 200 grams of butter into a medium-sized pan.
- Step 3: Combine 1 tablespoon of instant coffee grains with 125ml of cold water and pour into the pan.
- Step 4: Gently heat over low flame until everything is melted - do not overheat. Alternatively, place into the microwave for around 5 minutes, stirring halfway through.
- Step 5: Combine 85g self-raising flour, 85g plain flour, ¼ tsp bicarbonate of soda, 200g light muscovado sugar, 200g golden caster sugar and 25g cocoa powder, and smooth out any clumps.
- Step 6: Mix together 3 medium-sized eggs and 75ml of buttermilk.
- Step 7: Combine the melted chocolate and egg mixtures with the flour and stir until you have a silky, thin texture.
- Step 8: Place the mixture into the tin and cook for 1hr 25 – 1hr 30 mins. To test if it is ready, insert a skewer into the center—it should come out cleanly and the top should be firm, even if it has slight cracks.
- Step 9: Allow the cake to cool in the tin, even if it collapses slightly, before transferring it onto a wire rack for it to cool completely. Slice the cake when it has cooled completely into three layers.
- Step 10: Place 200g of chopped dark chocolate in a bowl. Heat 300ml of double cream and 2 tablespoons of golden caster sugar in a pan until it is on the verge of boiling.
- Step 11: Remove from the heat source and carefully pour over the chocolate. Stir until the chocolate has completely melted into the mixture, creating a smooth texture. Allow to cool until it reaches a slightly more viscous yet still pourable consistency.
- Step 12: Spread a thin layer of ganache in between the layers. Pour the remaining ganache over the cake, allowing it to flow down the sides and fill in any cracks with a spatula.
- Step 13: Garnish with either 50g of grated chocolate or 100g of chocolate curls. This cake will remain moist and gooey for 3-4 days.
