Ingredients
- 4 large organic egg whites, at room temperature
- 115g caster sugar
- 115g icing sugar
Instructions
- Step 1: Preheat the oven to a temperature of 110C/100C fan/gas ¼.
- Step 2: Place a layer of non-stick liner or parchment paper on two baking pans (meringue can get stuck to greaseproof paper and foil).
- Step 3: Gently pour 4 large egg whites into a large, pristine bowl (not plastic). Use an electric hand whisk to beat the mixture on medium speed until it takes on a cloud-like texture and forms stiff peaks when the blades are lifted.
- Step 4: Gradually add 115g caster sugar one spoonful at a time, increasing the speed of the mixer in between each addition. Make sure to add the sugar gradually in this step to avoid the meringue from becoming liquidy when finished. Do not whisk for too long though. The blend should be sturdy and glossy when done.
- Step 5: Gradually add 115g of icing sugar in portions of one-third, sifting it over the mixture first. Gently combine each portion by folding it in with a large metal spoon or rubber spatula, taking care not to stir the mixture too aggressively. Once all the icing sugar has been incorporated, the mixture should be glossy and fluffy.
- Step 6: Using a heaping dessert spoon, scoop out the mixture. Then, use another spoon to help form an oval shape on the baking sheet, or simply drop them in rough circles if that's what you prefer.
- Step 7: Place the meringues in a fan oven and bake for 1 ½ to 1 ¾ hours, or in a conventional or gas oven for 1 ¼ hours. They will be ready when they sound crisp when tapped underneath and become light brown in color.
- Step 8: Allow the meringues to cool on the trays or a cooling rack, then store them in an airtight container for up to two weeks or freeze them for a month. To serve, place two meringues together with a large dollop of light and fluffy whipped double cream.
