Welcome to my kitchen, foodies! Today I'm going to bake something special - Delectable Honey Flapjacks. Sweet and nutty, these crunchy treats are too delicious to resist!
I start off by melting the butter, peanut butter and honey (or maple syrup, whatever you fancy!) in a small pan. Then, I mix in some mashed banana, apple and hot water. The smell of all those ingredients coming together is magical!
Next, I fold in all the crunchy ingredients like oats, dried fruits and seeds. I make sure that everything is evenly blended, before pouring the batter into a square tin and baking it for 55 minutes until the top is golden brown.
When it cools off, I can't wait to cut it into 12 pieces and serve it. My friends and family love the sweetness and crunch of these flapjacks. They don't stay with us for too long though - they are gone pretty quickly!

Ingredients
- 50g butter, plus a little extra for greasing
- 2 tbsp smooth peanut butter
- 3 tbsp honey or maple syrup
- 2 ripe bananas, mashed
- 1 apple, peeled and grated
- 250g rolled oats
- 85g dried apricot, chopped
- 100g raisin
- 85g mixed seed (we used pumpkin and sunflower)
Instructions
- Step 1: Preheat oven to 160C/140C fan/gas 3. Grease and line a 20cm square tin with baking parchment. Place butter, peanut butter and honey or maple syrup into a small pan and heat until melted. Put mashed banana, apple and 100ml hot water into the pan and mix everything together.
- Step 2: Combine the oats, dried fruit and seeds into a large bowl. Incorporate the banana and apple mix and stir until everything is evenly blended. Pour the mixture into a cake tin and flatten the surface. Bake for 55 minutes until the top is golden brown. Allow to cool in the tin before cutting into 12 pieces. Serve or store in an airtight container in the fridge, staying fresh for up to 3 days.
