Ingredients
- 175g softened butter
- 50g golden caster sugar
- 50g icing sugar
- 2 egg yolks
- 2 tsp vanilla extract
- 300g plain flour, plus extra for dusting
For the custard filling
- 100g softened butter
- 140g icing sugar, sifted, plus a little extra
- 2 tbsp custard powder
- few drops yellow food colouring, if you have any
Instructions
- Step 1: Preheat the oven to 200C/180C fan/gas 6. Stir the butter, 'sugars', egg yolks and vanilla together with a wooden spoon until the combination is creamy, then add the flour in two stages. Roll out the dough onto a floured surface and use a 30cm ruler as a guideline to cut the dough into equal squares. To do this, start with the ruler flush against one side of the dough and slice it along the length of the ruler. Repeat this step to cut into squares across the width of the dough. Cut the dough from top to bottom with the same method. Place the cut dough onto baking sheets and bake 8-10 minutes until they turn a golden brown color.
- Step 2: Combine the butter, icing sugar, custard powder and food dye, if you wish to. Place a dollop of the mixture onto one biscuit, then place another biscuit or two on top. Repeat this process until all the biscuits are used, and give it a dusting of extra icing sugar on top.
