Ingredients

  • 1 tbsp instant coffee
  • 1 tbsp Tia Maria or brandy
  • 4 large eggs, separated
  • 100g golden caster sugar
  • 300ml pot double cream
  • 100g/4oz pack honeycomb Toblerone, finely chopped
  • dark chocolate curls, to decorate

Instructions

  • Step 1: Grease and line a 1-litre loaf pan with plastic wrap. Combine the coffee, Tia Maria or brandy, egg yolks, and sugar in a bowl and stir until the coffee is completely dissolved. Place the egg whites in a large bowl and add the cream to another.
  • Step 2: Using an electric whisk, whisk the egg whites until they are stiff and then quickly combine the egg yolk mixture until it is thick and leaving a trail. Subsequently, beat the cream until it holds its form. If you follow this order, you do not need to clean the whisks between steps.
  • Step 3: Gently and slowly incorporate the cream into the coffee mixture. Then fold in the whites. Add the Toblerone and pour the mixture into the loaf tin. Cover the top with cling film, then place it in the freezer. Once frozen, wrap it in foil and re-freeze. This dessert can last up to 6 weeks. Make the chocolate curls as per the video 'instructions' and store them in an airtight container or put them in the freezer.
  • Step 4: Take off the plastic wrap and place it on a plate. Garnish with the indulgent chocolate curls.
