Ingredients
- 100g cocoa
- 250g butter
- 500g golden caster sugar
- 4 eggs, beaten
- 100g self-raising flour
- 100g desiccated coconut
- icing sugar, to dust (optional)
Instructions
- Step 1: Preheat the oven to 180C/160C fan/gas 4. Grease a 21cm square tin and line the base with baking parchment. Place cocoa, butter, and sugar in a large saucepan. Heat on low and stir until the 'ingredients' are completely melted and combined. When the cocoa mixture is warm, slowly add the eggs, stirring after each addition. Next, fold in the flour and coconut until fully incorporated.
- Step 2: Place into the pan and cook for 45 minutes on a middle oven rack - check after 30 minutes and cover with a sheet of parchment paper if the top is becoming too dark. Allow to cool in the pan, then remove and divide into pieces.
