Ingredients

  • 200g caster sugar
  • 200g softened butter
  • 4 eggs, beaten
  • 200g self-raising flour
  • 1 tsp baking powder
  • 2 tbsp milk

For the filling

  • 100g butter, softened
  • 140g icing sugar, sifted
  • drop vanilla extract (optional)
  • half a 340g jar good-quality strawberry jam
  • icing sugar, to decorate

Instructions

  • Step 1: Preheat your oven to 190C/fan 170C/gas 5. Grease two 20cm sandwich tins with butter and line with a sheet of non-stick baking paper.
  • Step 2: Using a large bowl, mix 200g caster sugar, 200g softened butter, 4 eggs that have been beaten, 200g self-raising flour, 1 tsp baking powder and 2 tbsp milk together until a creamy, soft batter is achieved.
  • Step 3: Divide the mixture into the tins, and use a spatula or a spoon to even out the top.
  • Step 4: Cook for around 20 minutes and watch until the cake turns to a golden color and pressing it will make it bounce back.
  • Step 5: Place onto a cooling rack and let cool completely.
  • Step 6: Combine 100g of softened butter and beat until smooth. Slowly add in 140g of sifted icing sugar and a drop of vanilla extract (optional).
  • Step 7: Use the buttercream to cover the bottom of one of the sponges, and then spread 170g of strawberry jam over the top. Place the other sponge on top to create the sandwich.
  • Step 8: Sprinkle some powdered sugar before enjoying. Store in an airtight container and consume within two days.
