Ingredients

  • 225g butter, softened
  • 110g caster sugar
  • 275g plain flour
  • 1 tsp cinnamon or other spices (optional)
  • 75g white or milk chocolate chips (optional)

Instructions

  • Step 1: Preheat the oven to 190C/170C fan/gas 5. Use a wooden spoon or stand mixer to mix the butter in a large bowl until it becomes a soft consistency. Incorporate the sugar into the mix and continue to mix until it is light and airy. Sift in the flour for a finer texture, and add any desired optional 'ingredients'. Combine the 'ingredients' together in a figure-of-eight motion until a dough forms. The dough can be frozen at this point.
  • Step 2: Divide the dough into pieces the size of walnuts and place them some distance apart on a baking sheet (there is no need to butter or line it). Gently press down on the pieces with the flat part of your hand and bake them in the oven for about 10-12 minutes until they are golden brown and a little bit hard on the top. Let the cookies chill on a cooling rack for around 15 minutes before serving.
