Ingredients

  • 200g unsalted butter, softened
  • 200g caster sugar
  • 3 eggs, beaten
  • 200g self-raising flour
  • 1 tsp baking powder
  • 3 tbsp whole milk
  • 1 tbsp vanilla paste / ½ vanilla pod seeds

For the icing

  • 125g icing sugar
  • 1 tbsp vanilla paste / ½ vanilla pod seeds

Instructions

  • Step 1: Preheat your oven to 180 degrees Celsius / 160 degrees Celsius fan/gas 4. Grease and line a 900g loaf tin (mine was 19cm x 9cm x 6cm) with parchment paper. Take a large bowl and mix all of the 'ingredients' for the cake, apart from the icing ones, with an electric hand whisk or a wooden spoon until a smooth, combined mixture is achieved. Pour the batter into the loaf tin and level it off with the back of a spoon. Bake in the oven for 40-45 minutes.
  • Step 2: Once done baking, take it out and let it cool off. Make the icing by mixing together the icing sugar, vanilla paste, and 3 tbsp of water; but if needed you can add more to give it a thick texture. Spread it around the top of the cake, with excess icing dripping down on the sides. Once done, let it set and then cut the cake into slices.
