Makes 12 filled macarons

Ingredients

  • 125g icing sugar
  • 1 tbsp cocoa
  • 100g ground almonds
  • 2 medium egg whites

For the filling

  • 50g milk or dark chocolate, chopped
  • 2 tsp skimmed milk, warmed a little

Instructions

  • Step 1: Preheat oven to 180C/ 160C fan/gas 4. Grease a large baking sheet with baking paper and dust with icing sugar and cocoa. Combine ground almonds to the mixture. Beat the egg whites until stiff and gently fold them into the rest of the 'ingredients'.
  • Step 2: Take the mixture and place it in an icing bag with a plain nozzle (or a large food bag with the corner snipped off). Squeeze it out onto the baking sheet making roughly 24 blobs, each 3cm in size, evenly spaced. Wet your finger and lightly press the surface flat. Allow them to sit for 15 minutes before baking for 15-20 minutes or until the macaroons are hard to the touch and come off the paper easily. Let them cool on the baking sheet, then remove and store in an airtight container for up to a week.
  • Step 3: Prepare the filling by placing chocolate into a bowl that can withstand heat and slowly melting it over a pan of gently simmering water. Incorporate the warm milk until it forms a consistent mixture. Let the mix cool down and thicken slightly before you use it to assemble the macarons.
